This is one really “charred” char kway teow. And I really like this uncle’s version of fried kway teow. It’s kinda like a cross breed of Singapore-style and Penang-style kway teow — not too much dark soy, not too wet, and comes with seafood.

The fat sea prawns and thick squid rings are cooked just right, with a succulent and bouncy texture.

Give this a try the next time you’re at Old Airport Road food centre. They can close as early as 1pm, when food runs out. Prices start from S$3.00.
