Located inside the S.E.A. Aquarium at Marine Life Park, Ocean Restaurant by Cat Cora is the newest celebrity chef restaurant to open at Resorts World Sentosa.

World renowned chef Cat Cora is best remembered for being the first and only female Iron Chef from Iron Chef America. Ocean Restaurant — chef Cora’s first in Asia — will showcase several of her signature dishes which have Mediterranean-Californian influences with an Asian flair. Her custom menu will incorporate sustainably sourced seafood, as well as fresh local produce from the region.

Ocean Restaurant by Cat Cora officially opens on Saturday, 2 Feb 2013. From February 2nd to 28th 2013, diners can experience a 5-course set dinner specially created by Chef Cora, priced at S$158++ per person.

At a recent preview, members of the media were invited to tour the restaurant and sample tasting portions from this menu (the following images are ala carte portions).

Silky tender trout, accompanied by salty caviar, sweet candied almond, and refreshing tomato jelly. This was a delightful medley of flavors and textures that teased our palates and whetted our appetites.

The next dish was warm and comforting. Loved the crispy Sakura shrimp contrasted against creamy risotto infused with black truffle. Pity the scallop was slightly over-seared that day.

The soup course looked unassuming, but turned out to be bursting with flavors of the ocean. Easily one of my favorite dishes for the night.

For the main course, there’s two options: the Wagyu striploin or the salmon. I picked the latter.

And I was very happy with my choice. The fish was the perfect doneness, so it was super juicy and meltingly tender. It went very well with the sweet-tart mandarin glaze. The citrus-scented couscous was a wonderful accompaniment to the fish.

And you can’t go wrong with a chocolate dessert!

The overall impression of this menu is simple, light and wholesome cooking, with an emphasis on the natural, fresh flavors of ingredients.

Much as we enjoyed the food, there were times when we got distracted by the stunning view of the full-length aquarium. It was really mesmerizing to watch giant manta rays, zebra sharks, and giant groupers swimming past at such close range. The experience of dining in Ocean Restaurant is truly magical!
