db Bistro Moderne – Mondays in Provence

We’ve been to celebrity chef Daniel Boulud’s Singapore outpost at Marina Bay Sands once to try their highly acclaimed burgers. Didn’t take photos that time and hence didn’t blog about it, but that meal was a wonderful introduction to db Bistro Moderne’s excellent offerings.

Besides burgers and a la carte menu, db Bistro Moderne has a seasonal menu on a rotational basis. Starting 2 July 2012, you can savor this special set menu highlighting the flavors of summertime in Provence, France every Monday evening.

The S$68++ set menu is a 3-course meal that consists of an appetizer, main course, and dessert. Add S$32++ for wine pairing.

At a recent media tasting, we were given a glimpse of the dishes available in this Mediterranean-inspired Provencal menu.

Provencal canapes

Dinner kicked off with three kinds of vegetarian-friendly bite-sized canapés:

  1. Caramelized onion and rosemary tart;
  2. Tomato compote, basil pesto and smoked mozzarella crostini; and
  3. Eggplant and goat cheese crostini.

For the appetizer course, you have 3 items to choose from – a soup, baked dish, and salad.

Soupe Au Pistou

The soup is a light and flavorful vegetable broth with coco beans, yellow and green zucchini, carrots, cabbage, red onion and potato, garnished with basil pesto and oil.

Petits Farcis Provencaux

If you like stuffed vegetables, you’ll love the second appetizer choice. Rustic and yet elegantly presented, there’s baby zucchini, baby eggplant, red onions, and purple artichoke stuffed with a mixture of minced lamb and beef, then baked in the oven. The stuffing mixture is seasoned with grilled peppers, onion, zucchini, rosemary, thyme, garlic and rice. Both the vegetables and stuffing are so flavorful and juicy they explode in the mouth!

Salade Nicoise

A modern version of the classic Nicoise salad, this one has no creamy mayo, but relies on a light, tangy lemon dressing to wake the palate. Beautifully confit and seared tuna are the main stars in this dish, alongside a supporting cast of butter head lettuce, olives, capsicum, artichokes, quail egg and anchovy-tied olives.

For the main course, you can choose one from these 3:


db’s bouillabaisse — the classic Mediterranean fish soup — is a luxurious and intense version that brims with the umami, sea-salty flavors of the ocean.

The fish broth — made with crushed fish, saffron, Pernod and fish stock — is so thick and rich it’s almost like a bisque.

On top of the broth sits roasted fennel, tomato confit, potatoes, John Dory fish, red snapper, scallop and tiger prawn, garnished with saffron rouille made with roasted capsicum, egg yolks, parsley, potato, garlic and olive oil.

Ravioli A La Daube D'Agneau

Meat and lamb lovers will embrace the second main course option.

The stuffing of the ravioli consists of tender, pulled lamb shoulder meat that’s been slow-braised in red wine and lamb stock. After the ravioli has been blanched, it is glazed with rosemary lamb jus.

Ratatouille De Legumes

And here’s ratatouille — another rustic French dish, but presented most elegantly. Eggplant, capsicum, zucchini, red onions stewed with tomatoes and basil, and served with baked quail’s egg and crispy polenta cubes.

Apricot Clafoutis

On to desserts! Instead of the usual cherry clafoutis, the pastry chef at db presents an apricot version.

Served warm, the clafoutis is garnished with almond tuille, honey marinated apricots, bourbon foam and almond ice cream.

Mousse Au Chocolat Au Lait

And knowing that everyone can’t resist a good chocolate dessert, the dessert chef prepared a surprise for us!

This delectable entremet is composed of chocolate hazelnut biscuit, praline gelee, milk chocolate mousse and praline glacage (glaze). On the side is cherry gel and a scoop of lemon-hazelnut ice-cream.

Mini madeleines

Of course, no visit to db Bistro Moderne is complete without their mini madeleines. Freshly baked and steaming hot, these little delightful morsels are unbelievably fluffy, light, crisp on the exterior and wonderfully citrusy!
