There’s at least one Hainanese chicken rice stall to be found in any Singapore hawker centre, food court, or coffee shop. Yet, it’s been a long time since I found one that’s worthy of mention.
Leong’s version may not be the best, but it certainly ranks as one of the most memorable chicken rice I’ve tasted in recent months.
The chicken: Fat, juicy meat. The most tricky part to get right — the breast — was sufficiently tender and not stringy. But it was a little on the bland side. Pay a bit more and ask for dark meat. You’ll be rewarded with smooth, flavorsome, and delightfully bouncy meat.
The rice: Fluffy grains subtly infused with ginger and shallot, as well as the distinct flavor of chicken stock and oil. Very old-school, and rather tasty.
The chilli: Looks pale, but packs a punch!
The dark soy sauce: An oft overlooked condiment, they used a very good quality soy that really upped the flavor impact.
Prices are very reasonable for the generous portions served. I also enjoyed the creamy chicken liver, another hallmark of great execution.
