Here’s another exciting core event that was held in conjunction with Hougang Mall’s Malaysian-themed Food On Parade festival. On 12 June 2011, celebrity foodie and chef KF Seetoh gave a culinary masterclass demo to a full house audience who packed the atrium at level 1 of Hougang Mall.
The one-hour demo saw Chef Seetoh preparing two tantalizingly spicy Malaysian dishes: Kacang satay (satay with spicy peanut sauce) and sambal sotong.
In the first half hour, Chef Seetoh took the audience through the elaborate process of slicing, dicing, mixing, and blending a multitude of ingredients that makes kacang satay so heavenly. This laborious procedure involved slicing chicken and beef into finger-length thin slices before being marinated. The spice paste was a fragrant concoction of lemongrass, garlic, shallots and peanuts — blended and fried.
By the time Chef Seetoh started making the chilli dip, the entire atrium was already filled with the intoxicating scent of spices, causing many shoppers to stop and watch the master at work!
There was never a boring moment as Chef Seetoh entertained the audience with his signature easy-going and light-hearted humor. The cooking session was also highly informative as Chef Seetoh frequently gave useful cooking tips and highlights on certain ingredients. Copies of the recipes were also distributed to the audience.
The audience were treated to tasting portions of kacang satay and the second dish — sambal sotong stuffed with minced chicken and fish. Both dishes were equally well received! The sotong was especially appetizing because the spicy sambal was spiked with tangy assam juice. One member of the audience actually exclaimed, “Must try to make this at home. The sambal is super shiok!”.
