
Mushroom & onion omelette with grilled tomato and toast
Today’s a public holiday. Hubby and I had the luxury of waking up later than usual. Then we made breakfast together!
Most of the time, hubby would be reading the papers while I fix breakfast. Yesterday, he suggested making his specialty again. This time, instead of cheese, we’d make a mushroom & onion omelette.
While Rick cooked the omelette, I grilled the tomatoes and toast. What a hearty vegetarian breakfast this was!
